Nada más entrar en este elegante establecimiento del barrio de Salamanca, percibimos de inmediato que estamos ante un restaurante de autor. Un local en el que sentimos el alma de sus creadores, su presencia y su sensibilidad, en el que podemos palpar hasta en el último detalle la personalidad de Leonor San José y del chef Javi Cabrera. El cocinero pone al servicio de su clientela – esos comensales que buscan una atmósfera de elegancia y confort– su depurada técnica y su talante eminentemente creativo, forjado en locales como La Alquería o La Sucursal. Y lo hace dando forma a una cocina mediterránea muy personal, en la que el producto brilla con luz propia en forma de dos menús degustación, uno largo y uno corto, que pueden pedirse también con maridaje.
La propuesta de Arrayán cambia en función de lo que depara el mercado y de la inspiración del chef, siempre con una base mediterránea y una buena dosis de alta cocina. Y su grandeza radica precisamente en que podemos encontrar desde un foie a una merluza, algún plato de raíz asiática, un ajoblanco o una tarta de manzana. La carta de vinos, por su parte, es también profundamente inspiradora, como lo es el conjunto de un local cuyo interiorismo –con sus cómodos sofás, sus grandes cuadros, las alfombras, las cortinas rojas…– nos hace sentir de inmediato seguros y cómodos. Y con ganas de probar más.

Located in a quiet side street to Alcalá with the cutest entrance; a very red door, just like coming home to a friend. Cozy and calm ambience with soft music, nice art on the walls and lots of candles all over the place. Good wine selection and the menu is an explosion of different flavors. We returned 3 times by now and warmly recommend this getaway in the heart of sizzling Madrid.
The food is outstanding with elegant service... In general you get exceptional personal treatment in this cozy restaurant. Looking forward to my next visit!

An incredible late afternoon lunch. The owner and chef did an excellent job in explaining all of the dishes and his wine recommendation was perfect. The service and food in general was wonderful. They didn’t miss a beat. We will go back on our next trip to Madrid.

A wonderful restaurant. Simply amazing cuisine, Michelin star level, we were welcomed in every possible way by all staff memebers. The place is quiet, few tables, perfect for a romantic dinner. The tasting menu was perfect in price and simply astonishing. 10 dishes including 2 desserts, all to be discovered. Wonderful dish presentations and warm welcome form the chef which is definitely one of the reason to be. Go there and spread the word before the chef gets another Michelin star ????
